Fine de Claire is the most common appellation of the Marennes-Oléron basin. It is a cupped oyster grown out at sea, then finished for a few weeks in a claire. That time in the claire is what sets it apart from an oyster sold straight after grow-out.

Fine de Claire or fine de clair?

You often see "fine de clair", without the final e. The correct spelling is Fine de Claire: a claire is the finishing pond, not a colour. In OstraOS the quality carries its exact name, and that name is what prints on your labels.

In some claires a micro-alga grows, the blue diatom. Oysters feeding on it turn green around the gills. Finished under the Label Rouge specifications, they can be sold as Fine de Claire Verte Label Rouge. OstraOS handles Label Rouge as a label added on top of the quality, and both stay visible in the lot history.

Tracking a Fine de Claire in OstraOS

  • When the lot enters the claire, you open an affinage: destination claire, density, target quality.
  • The farm map shows which lots are finishing and which are close to leaving.
  • On closing, OstraOS compares actual duration with the minimum set for the quality and flags the event compliant or not.
  • Until purification and affinage are validated, the lot cannot be reserved on an order.

Remember

Minimum durations and maximum densities are rules you set per quality. When the specifications change, you update them once and OstraOS applies the new rule to the following events.
