The flat oyster — Ostrea edulis — carries a distinct world of appellations from the cupped oyster. OstraOS natively handles the historic qualities of this species, from the prestigious Belon to its cousins Fine and Spéciale flat.
Three flagship qualities
- Belon: traditional appellation from the Belon river in Brittany, one of the most renowned flat oysters.
- Fine flat: standard flat-oyster quality after purification.
- Spéciale flat: premium quality, with stricter specifications.
- Organic: rearing under the applicable organic standards.
Unlike its cupped cousin, the flat oyster usually does not go through Marennes-Oléron claire affinage. Its purification follows the same regulatory frame as any shellfish species, with mandatory transit through purification before commercial release.
