The cupped oyster — Magallana gigas — carries the most iconic qualities of the trade. OstraOS natively supports the whole Marennes-Oléron ecosystem, from the most discreet claires to the most demanding appellations.
Claire-affinage qualities
- Fine de Claire: affinage in Marennes-Oléron claires, guaranteed meat ratio.
- Spéciale de Claire: extended affinage, more demanding meat ratio.
- Pousse en Claire: the longest affinage, the strictest stocking density, premium quality.
- Standard: cupped oyster without claire affinage, ready after purification.
- Label Rouge, Organic, PGI Marennes-Oléron: complementary qualifications handled as labels.
For each quality, OstraOS knows the minimum affinage duration, the maximum stocking density and the expected meat ratio. You stay in charge of those rules: they are fully configurable in the traceability settings.
Tip
Flat oysters (Belon, Fine, Spéciale flat) are a distinct world, covered in a dedicated article. Don't mix up Fine de Claire (cupped) and Fine (flat) — they are not the same products.
