Affinage in claires
In-claire maturation matched to the target label, durations and densities handled by the system.
Claire-based affinage is what turns a regular oyster into a Fine de Claire, a Spéciale de Claire or a Pousse en Claire. OstraOS structures the journey through two paired events — affinage start and end — and compares the actual duration to the minimum the target label requires.
Starting an affinage
On entry into a claire, you set the target quality, the destination claire, the stocking density and the planned duration. The counter starts. The farm map continuously shows which lots are in affinage and which are nearing the end.
Automatic compliance on exit
When closing the affinage, OstraOS compares the actual duration to the minimum required by the current label and marks the event as compliant or non-compliant. This double check secures traceability and makes PGI audits easier.
Business framing
Minimum affinage durations are configurable per quality in the traceability rules. Editing a rule takes effect immediately for upcoming events.
