The mandatory regulatory step before any commercial release.

Purification — known in French as "dégorgeoir" — is the mandatory step that prepares shellfish for consumption. OstraOS frames it with a start and an end event, and marks the lot as sellable once the regulatory duration is met.

Three purification methods

  • UV tank: purification through ultraviolet treatment, the most common in modern operations.
  • Natural basin: renewed seawater bath, the traditional method of Marennes-Oléron and Brittany.
  • Stainless tank: closed-loop purification, ideal for small batches or specific controls.

Whatever the method, the purification zone is picked at opening, and compliance with the regulatory duration is checked at closing. The lot is automatically marked sellable once the exit is validated.

Remember

It is the purification end event that makes the lot eligible for sale. The going-on-sale date is recorded automatically and appears on the product's public traceability page.
